Cranberry Orange Nut Bread

1 c fresh cranberries
1/2 c walnuts, chopped
1 T orange peel, grated
2 c flour
1 c sugar
1 1/2 t baking powder
1 t salt
1/2 t baking soda
2 T shortening
3/4 c orange juice
1 egg beaten

Preheat oven to 350* - grease 9x5x3" loaf pan.  In food processor, chop cranberries and nuts separately, set aside.  Also in food processor add sugar and orange peel and combine well.  In a separate mixing bowl add flour, b. powder, salt and b. soda.  Add shortening to flour mixture until well combined.  Next add o.j. and egg.  When well combined but not over mixed add cranberries and nuts.  Bake 60 minutes.  Cool on rack for 15 min. then remove from the pan.

I make this at Thanksgiving time, usually a day or two ahead, the flavors really enhance during that time.
