Grandma Smith's Meatloaf

Meatloaf mix:

3 # hamburger
1 large onion, diced
2 eggs
3/4 c. oatmeal
2 T. bbq sauce
2 T. milk
1 t. garlic powder
1 t. salt
1/2 t. pepper

Saute onion in small amount of butter or spray with cooking spray. Cool.  Mix all the ingredients thoroughly and divide to make 2 separate meat loaves.  I use 9" round cake pans to form round meat loaves.  Preheat oven to 350* and bake 1 1/2 hrs total time.  After 1 1/4 hrs add enough of the special sauce to cover top. Heat the extra sauce in a pan or microwave to melt brown sugar. Serve extra sauce in a bowl.   

Special sauce for top:

2 c. ketchup
1 long squirt of yellow mustard
brown sugar (enough so it stops tasting like ketchup)

Serve this comfort meal with mashed potatoes and green beans or garden salad.

In general, I put the second loaf in the freezer for a couple weeks done the road.  I freeze the extra sauce too.

Extra note:  You can shape this however you'd like.  Individual hamburger size is fun and done on the broiler pan.  Only takes 20-30 minutes to bake and easy to serve.
