Chicken and Orange Salad (WW)

1 med. orange, navel, peeled, white pith removed, cut into bite-size pieces 
5 oz cooked skinless boneless chicken thighs, cut into bite-size pieces 
2 cups romaine lettuce, coarsely chopped or torn 
2 small shallots, minced 
1 rib large celery, chopped 
2 T. sliced almonds

    1 1/2 T frozen orange juice concentrate, thawed 
    1 T white wine vinegar 
    1 1/2 t water 
    1 t canola oil 
    1 t honey 
    1/4 t table salt 
    1/4 t black pepper 
    1/8 t crushed red pepper flakes

    * In a large bowl, combine orange, chicken, lettuce, shallot, celery and almonds.

    * To make dressing, combine remaining ingredients in a cup; stir well to blend in honey. Pour dressing over salad just before serving; toss gently but well. Yields about 2 cups per serving.

I have tried this recipe, it is great!  We used Litehouse's Orange Citrus dressing to make it simpler.  My girls and I love this recipe.
