Beth's Favorite Chocolate Chip Cookies

2 1/4 c. all purpose flour
1 t. baking soda
½ t. salt
½ c butter, softened
½ c. shortening
3/4 c. sugar
3/4 c. brown sugar
1 t vanilla extract
2 eggs
1 ½ c semi-sweet chips
1 c. walnuts (optional)

Preheat oven to 375*.  Stir together the first 3 ingredients.  In a large bowl beat sugars, butter, shortening and vanilla.  Add eggs and beat well.  Gradually add flour mixture.  Stir in chips and walnuts.  Bake 8-10 minutes.

***Note sometimes I substitute whole wheat flour for the all purpose.  Use this combination if you’d like.  Instead of the 2 1/4 c - I’ve used 1 c soft wheat, 1 1/4 c spelt, 2/3 c oatmeal.  I like the texture the oatmeal adds.  Also I use half shortening so that the cookies don't spread to thinly in the oven. 

Also this is the basic recipe that comes on the bag of Hershey’s Chocolate Chips.  Use the Special Dark if you can find them.
