Chewy Caramel Candy





3/4 c. light corn syrup
2 c. brown sugar
1/2 c. butter
2 c. whipping cream, divided
1 t. vanilla
dash of salt

Combine the first 3 ingredients plus 1 cup of the cream.  Bring to a boil.  gradually add the remaining cream.  Bring to the softball stage (240*) Take off the heat and add the salt and vanilla.  Pour into 9x13" buttered pan.  Let cool cut into squares. 

This is a reality easy recipe and it came from my Amish Friends Book.  I've also dipped these in dark chocolate, like the caramel by itself isn't good enough.
