Spanish Rice



1-2 T. Oil
1 ½ c. white rice
1 onion, diced
4-5 cloves of garlic, pressed

Heat oil in the pan you plan to cook the rice in.  Saute the onion, and the rice and brown slightly, at the last minute add garlic and saute about 30 seconds. 

Next add:

1 ½ c. Pace Picante sauce (or other salsa)
1 ½ c. water
1 bay leaf
1 t. taco seasoning
1 T. dry parsley
pinch of oregano
pinch of dry jalapeno (optional)

Bring to a boil, cook 20 minutes just at a slight simmer.  Stir when time is complete.

This is my original recipe, it is a combination of several I have tried over the years.  You can also use plain tomato sauce instead of the salsa.
