ARROZ CON POLLO: (Chicken with Rice)

6 whole chicken thighs
1 med onion, diced
1 lg. tbsp. minced garlic
1 half bell pepper, diced
1 tsp. smoked paprika
2 tsp. ground cumin
2 tsp. dried oregano
1 can fire roasted diced tomatoes
2 cans chicken broth
1-1/2 cups uncooked rice,( rinsed under cold water till water runs clear, shake strainer to get all the water off)
Pinch of red pepper flakes
2 tbsp. cooking oil
1 cup frozen peas
Salt and pepper to taste

Pour oil in large deep skillet, season chicken with salt and pepper and brown in heated oil till browned well. Remove chicken and set aside. In same skillet sauté the onion and green pepper about 3 min. Add the rice and brown, then add garlic and sauté another few minutes. Add paprika, cumin, oregano, tomatoes, chicken, broth, red pepper flakes and the chicken. Cover skillet with lid and cook till rice is almost done. Add peas, replace lid and cook about 5 min. more.

This recipe comes from the Quilting Board again.  I will try it some time.  I love this from a mexican restuarant.
