Cleansing Gazpacho Soup

•4 cups roma tomatoes
•3 ribs celery
•1 mexican green onion (or 3-4 regular green onions)
•1 large cucumber
•1-2 small garlic
•1-2 tablespoon extra virgin olive oil
•1 tablespoon coconut aminos (or regular liquid aminos)
•1 teaspoon sea salt
•pepper to taste
•optional: if you like it hot, add a 1/4 of a jalapeno or a dash of cayenne

 Cut all vegetables into large chunks. Place tomatoes with 1/2 cup water in the blender and blend. Add the remaining ingredients. Blend until smooth. If you have a high powered blender like a Vitamix, be careful that you do not blend too long or it will cook the soup. Adjust ingredients to your liking.

For variation, you can also add parsley, red bell peppers, and even avocado. This recipe will serve 2 as a main meal or 4 as a side dish.

Equipment needed: blender

Yield: 4-5 cups
