Sauerkraut Salad

1  #2 jar sauerkraut (Libby's), drained well
1  med white onion, diced
1  cup celery, diced
1/2 green pepper, diced
1/2 red pepper, diced

1/2 c. apple cider vinegar
1/2 c. sugar
1/2 c. salad oil

mix dressing ingredients well and pour over the other ingredients.  Refrigerate 24 hrs, stirring several times.  Last several days in the fridge.

This recipe is from a dear lady at Trinity Presbyterian.  It is a delious salad similar to coleslaw.  It would go great with bbq pork sandwiches or tons of other things.  Thank you, Sally!
