Quick and Easy Broccoli Rice Casserole
12 - 16 ounces broccoli (steam or use can use frozen)
1/2 cup chopped onion (about 1 small onion chopped)
3 tablespoons butter
1 cup Velveeta diced into small cubes
1 can cream of chicken soup
2 cups cooked rice
If you are using fresh broccoli steam in a steamer until just done. Follow the directions on your steamer, or steam with a pot and a steamer insert, this takes about 5 to 7 minutes. Saute chopped onion in butter until the onions are transparent. Add Velveeta cheese, can of cream of chicken soup, broccoli, and rice to pot where the onions were steamed and stir through. You can simply serve this dish now, or you can put it in an 8 x 8 baking dish, refrigerate until you are ready to serve and then heat in a 350 degree oven for about 20 minutes to warm the casserole.
A friend of mine use to make this. I really liked it, it was great for a potluck. Sometimes she added chicken to make it a main dish.
