Peppermint Patty Cake


Preheat oven to 325º. Grease and flour three nine-inch cake pans.

Chocolate Cake*
1 devil's food cake mix
1/2 cup all purpose flour
3 tablespoons cocoa powder
1 1/3 cup buttermilk
1 stick (8 ounces) butter, room temperature
4 large eggs
1 teaspoon real vanilla extract

Place all ingredients in a mixing bowl and blend on low speed for about one minute till everything is incorporated. Scrape down the beater and sides of the bowl. Beat again at medium speed for about two minutes until the batter is smooth. Evenly divide the batter among the three pans. Bake for about 20 minutes until a toothpick inserted in the center of the cake comes out clean. Let cakes cool for a few minutes in the pans, and then turn out onto racks to cool completely.

Peppermint Patty Buttercream
1 stick (8 ounces) butter, room temperature
3 cups powdered sugar
3-4 tablespoons milk or cream
8 small peppermint patty candies, chopped into small pieces

Place butter in mixing bowl and cream on low speed. Slowly add powdered sugar and milk. Beat to a smooth consistency. Add candy pieces and mix until evenly distributed.Â

Peppermint Chocolate Ganache
1 1/3 cups chocolate chips
3/4 cup heavy cream
1 tablespoon peppermint schnapps or 1/2 teaspoon peppermint extract

In a small saucepan, bring cream to a boil, stirring constantly. Pour over chocolate and stir until consistency is completely smooth. (You may also use a food processor to mix the cream and chocolate.) Stir in schnapps or extract. Allow the ganache to cool at room temperature or in the fridge till it reaches a spreadable consistency.Â

Assembling the Cake
Place one cake layer on a plate or cake stand. Cover top with half of the buttercream. Place the second layer on top and cover top with the remaining buttercream. Place the third layer on top and cover the whole cake with the ganache. Decorate with peppermint candies.


*Note: If you're a die-hard from-scratch baker, just use your favorite devil's food cake recipe!
